Zucchini with Saffron Aioli

Zucchini with Saffron Aioli

INGREDIENTS:

  • Firehook Classic Sea Salt Crackers 
  • 1/2 cup good-quality mayonnaise
  • 1 pinch saffron threads (about 10–15 threads)
  • 1 tablespoon hot water
  • 1 teaspoons lemon juice
  • Salt, to taste
  • 1 small raw zucchini 
  • Cracked Black Pepper

INSTRUCTIONS:

  1. Prepare Saffron Aioli: Soak saffron threads in 1 tablespoon of hot water for 5–10 minutes. In a bowl, combine mayonnaise and lemon juice. Stir in the saffron water and threads until fully incorporated. Add salt to taste. Chill for 15 minutes to let flavors meld. 
  2. Create long zucchini ribbons by dragging a vegetable peeler across the length of the zucchini in smooth, even strokes 
  3. Top Firehook Classic Sea Salt Cracker with a dollop of saffron aioli 
  4. Add zucchini ribbons, twisting of folding for visual appeal 
  5. Garnish with cracked black pepper
