2 tbsp extra virgin olive oil (separate from olive oil to cook acorn squash & leeks)
Salt and pepper
To garnish: pomegranate seeds, sumac, flakey salt, evoo
Firehook Garlic Thyme Crackers
INSTRUCTIONS:
Preheat oven to 400 degrees and line baking sheet with parchment paper
Half medium/large acorn squash and scoop out seeds
Wash and cut 1-2 medium leeks
Drizzle olive oil into squash halves and on leeks, lay squash halves unsaid down on baking sheet and lay out leek rounds
Bake for 40 minutes (this is dependent on size of squash), or until squash is soft enough to poke a fork through, leeks are golden brown & caramelized, and remove from oven
Flip squash right side up to allow steam to escape, and let squash and leeks fully cool
Add 2 cups of the roasted acorn squash and leeks into a food processor and pulse until pureed
Add in the rest of the ingredients and whip to reach desired consistency, generously seasoning with salt and pepper, tasting as you go
Serve in a bowl with pomegranate seeds, sumac, flakey salt, evoo and enjoy with Firehook Garlic Thyme Crackers!
