Tomato Peach Bruschetta

This sweet and savory combination is fresh, flavorful and full of color. Firehook Cracker’s sturdy, crunchy texture makes them the perfect vehicle to capture every bit of the delicious topping.

INGREDIENTS:

  • 3 tbsp white balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • 2 garlic cloves, finely chopped or grated
  • 1/2 cup fresh basil leaves, thinly sliced
  • Flaky sea salt, to taste
  • 3 large ripe peaches, pitted and small diced (about 1 ¾ pounds) 
  • 2 pints ripe cherry tomatoes, diced small 
  • Pinch red chili flakes, optional
  • Firehook Rosemary Sea Salt Crackers, for serving

INSTRUCTIONS:

  1. In a large bowl, whisk together balsamic vinegar, olive oil, garlic and basil.
  2. Add the peaches and tomatoes, tossing gently to coat. Season with flaky sea salt to taste.
  3. Cover and let the mixture marinate at room temperature for 20–25 minutes. Taste and adjust with more vinegar or salt, if needed.
  4. Spoon over Firehook Rosemary Sea Salt Crackers and enjoy immediately.
